Château Kefraya

IXSIR’s winery is located in the mountains of Batroun, north of Lebanon, in a village called Basbina, at 400 meters above sea level. Built underground with sustainability at its heart, the winery kept the region’s landscape intact. A 17th-century restored feudal house serves as the entrance, and symbol, of IXSIR. This house is home to a restaurant that serves a cuisine perfectly paired with IXSIR wines. The winery is built on different levels, allowing wine to be made using the method of “gravity-fed” winemaking, with very little pumping used during the process, as grapes and wine flow freely from one level to the next. The wine cellar is built 12 meters underground, thus taking advantage of the soil’s thermal consistency instead of mechanical refrigeration. Zenithal skylights on the roof maximize the use of sunlight on all floors, which reaches the underground cellar.&nbsp; The winery welcomes visitors year-round, even during harvest season. Through daily guided tours, they can discover the green aspect of the winery as well as the winemaking process. They can also stroll in a botanical garden set on the roof of the winery, where they can see, side-by-side, more than 22 different grapes varieties. Nestled at the foothill of the great Chouf mountains, home to the majestic cedars of Lebanon, lays the ancient village of Maasser El Chouf. Throughout most of its history, Maasser had produced some of the finest wines and olive oil in all of the Middle East. In fact, the word Maasser in Arabic is synonymous with winery or more accurately “juicer.” Unfortunately, however, the village of Maasser El Chouf had stopped producing its brilliantly balanced wines for a number of decades. Arak Farid was named after Farid, the beloved grandfather of the brand's founders. Farid was a man of few words and a raw attitude; no flattery, no praise. Their arak is honest, so was Farid. Only pure untamed conversations. He had a unique taste for life, so they made this arak in his name and they handcrafted it in his hometown of Ain Jouaiya in Lebanon.They host private tasting groups at their distillery&nbsp;between the months of April and October.&nbsp;While they cook the Arak, tasting can be done directly from the "Kerkeh" as the spirit drips from it.
